IT ALL STARTED WHEN...

Growing up in Massachusetts, our family spent most of the summer harvesting strawberries, blueberries and rhubarb to turn them into wonderful pies and jams.  My Sicilian Grandmother always had a full canning cupboard down in her basement filled to the brim with plum jam, strawberry jam and all sorts of pickles, canned tomatoes, sauces and Italian delicacies.  My husband hails from Scotland, where we spend our summers picking strawberries and raspberries and enjoying the most wonderful jams, compotes and crumbles.  So one could say that starting a business to share our bounty is a natural thing for me.

Every year our family spends our time hiking and seeking that one perfect orange tree, filled with juicy, tart fruit and we go home and eat them. Plundering the Northwest Open Space in San Juan, we pillage the last remnants of the San Juan orange tree tradition. We've been given lemons, figs and oranges.

In Scotland, jam is a matter of pride. You can live and die by your recipes. The beautiful and bountiful products that are sourced from our local trees comprise the ingredients that go into the Capistrano Jam Company's local products.

Fresh, local, organic, and simple--This is home canning at its finest and its roots are based in the Southern California fruit tradition.

Simple, organic and fresh ingredients are the basis of Capistrano Jam’s preserving tradition.  We cook in small batches capturing the flavor and sweetness of this season’s fresh picks.  We buy fruit and vegetables from family farms and local producers and that means,

the jam we serve is picked and jarred right away, delivering freshness you can taste.

Strawberry Jam California is the top producer of strawberries in the U.S, and there are plenty of places around Southern California where we can roam the fields and fill our baskets with berries. Capistrano Jam Company is surrounded by two of Southern California’s best organic strawberry fields—The Ecology Center and Tanaka Farms. Strawberry jam is a classic and is delicious on toast, sandwiches, baked goods, and tarts. Raspberry Jam What is a jam company without the sweetness and joy of Raspberry Jam? My family’s favorite jam is Raspberry. We use our Raspberry jam on toast, in tarts, coupled with warm, buttery scones fresh out of the oven and they make great gifts to all our friends who love a good peanut butter and raspberry jam sandwich. In late Summer, we make the trip to Riley’s Farm in Oak Glen where we gather as many raspberries as we can to make our first batch of the season. Seville Orange Marmalade Marmalade found its origins in Dundee Scotland, where Spanish ships loaded with Seville Oranges were traded for goods. The practical Scots would get to work processing these tart and vibrant oranges into one of the world’s greatest pleasures—Orange Marmalade. We have a friend in Santa Barbara with a small Seville orange grove where we pick the most fragrant and fresh oranges. Then we bring them home and get to work. Our Orange Marmalade has layers of sweetness and tartness. Our tradition is to leave pieces of the peel to enjoy and savor as you spread our jam on rolls and toast. We also recommend using our jam on roasts, in sauces, as a filling for cakes and in cocktails! Citrus Marmalade Occasionally a batch of amazing fruit passes our way, and in San Juan Capistrano oranges, lemons, grapefruits and limes are in abundance. When that happens, we make delicious marmalades. If you’re lucky, you can get one of our jars of small batch eureka lemon marmalade, or specialty marmalades such as Clementine lemon, foraged orange or Mexican lime marmalade.
Fig Jam Oh the joys of late summer and fall when fig season is in full swing. We have several local fig producers that share their bounty with us and we are making the best fig jam. Often sweet and tart at the same time, we use our fig jam on cheese, spread on sandwiches, between cake layers and as a wonderful sweet and sultry addition to gravy and sauces. A jar of fig jam will transform a roast from good to amazing! One of our best sellers and most requested jam is our Balsamic Fig Jam. Sicilian Chili Jam A Sicilian tradition is to harvest red and green chilis and mix with peppers to create one of the world’s best gifts to a cheese plate—Sicilian Chili Jam. Sometimes tart, and always spicy, this recipe will always bring joy to your palate, coupled with a sweet heat. Sicilian Chili jam is best served with soft cheeses, but layered on a sandwich, or as a sauce for seafood is a fun option. Foraged Fruit Jams One of the most wonderful charms of jam making starts with a good hunt for a fresh berry or fruit tree. Every year, we make new foraged jam. Sometimes in fall, we discover a prickly pear cactus that is laden with ripe, magenta fruit. Occasionally a persimmon tree will be too much for a neighbor, or on a trip through the mountains, we may discover huckleberries, service berries, wild blackberries, or an apple producer selling their bounty. These are the building blocks for the most delicious home made jams. Granola Sweetness and wholesome goodness is what a delicious jar of granola brings. Our honey, pecan and pumpkin seed granola is a delicious treat, of energizing seeds and superfoods, coupled with the most wonderful sweetness from local honey producers and organic oats. Try this delicious granola on fresh greek yogurt with a dollop of raspberry jam or orange marmalade.
